  • 1 can vegetarian vegetable soup
  • 1 can condensed tomato soup (I use Campbell's 'Healthy Request'

)n- 1/2 cup chopped onionn- 5-6 sliced mushroomsn- 1/3 block Yves Gimme Lean 'Sausage' crumbledn- dash of olive oil,vegetable oil,etc. (Whatever you have on hand) -- optionaln
nnDirections:nnThis is my vegan take on a very ncommon 'hotdish' that is made by neveryone around here. It's extremely nsimple to make and VERY flexible. This nis traditionally made with normal,ncheap elbow macaroni and hamburger so nyou COULD substitute hamburger style ncrumbles and/or plain elbow macaroni- nbut I prefer the sausage style stuff nand whole wheat macaroni. nnFirst,boil macaroni according to the ndirections on the box and drain. nIn a separate pan,heat a small amount nof oil over medium-high heat (this nstep can be skipped if you have a nreally good non-stick pan). Add onion,nmushrooms,and 'sausage' to the pan. nFry until the sausage is browned. nAdd 'sausage' mixture to cooked elbow nmacaroni. Pour vegetarian vegetable nsoup and condensed tomato soup over nthe noodles and sausage mixture.**Do nNOT add water** Mix well and allow to nheat for a few minutes. nnMy father and grandparents (omnivores) nlove to eat this 'hotdish' with vegan bread nand butter and tons of black pepper. nBread and peanut butter is also great nwith this dish.nnServes: 4-5nnPreparation time: 15 minutesnnn',
