Ingredients

Ingredients (use vegan versions):
  • 6 cups of baby spinach
  • 1 medium cucumber
  • 1 tomato
  • 1 carrot
  • 1 orange
Directions:

1. Cut cucumber in 1/4 inch slices.

2. Cut tomato in 1/4 slices then cut in half.

3. Peel carrot. once carrot is peeled, use knife and cut whole thing as if you peeled it to nothing.

4. Add baby spinach, cucumber, tomato, and carrot, layering in that order.

5. Peel orange. Then break each of the eight wedges into thirds. Be sure to do this over the bowl so the juice gets all over the salad.

Serves: 2
