Ingredients
Ingredients (use vegan versions):
- 1/2 to 1 cup warm cooked quinoa
- 2 toasted torn up corn tortillas
- 1/2 cup cooked black beans
- 1 chopped tomato
- 2 handfuls salad mix (baby greens mix with nutty tasting greens works best)
- Italian salad dressing
Put all but dressing on a plate. Pour enough dressing to flavor, but not coat ingredients, over all. Toss with hands and eat. This really does taste good. It has a subtle mix of flavors and is between a hearty and light meal. Enjoy.
