Ingredients
Ingredients (use vegan versions):
- 1 lb can pumpkin puree (not pumpkin pie mix)
- 1 cup orange juice concentrate
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon ground cinnamon
- 2-3 tablespoon instant clear jel (a pre-cooked cornstarch)
Combine pumpkin, orange juice concentrate and spices in blender. Blend until smooth and well mixed. While blending, add instant clear jel, a tablespoon at a time, until thickened to spreading consistency.
Instant Clear Jel is a pre-cooked cornstarch, it should be available at your health food store, if not, ask for it. It is wonderful stuff. Thickens instantly, without cooking.
