Ingredients (use vegan versions):
  • 2 slices whole wheat or nine-grain vegan bread
  • 1 plum tomato, sliced
  • 1 handful romaine lettuce, torn
  • your favorite hummus
  • sweet relish
  • onion powder
  • cayenne pepper
  • salt and pepper to taste
Directions:

Because you''re going to put wet ingredients on this sandwich it''s best to toast the vegan bread first. Spread the hummus on both slices (veganaise and horseradish mustard is also really great on this). Add your slices of tomato and torn lettuce onto one side. Spread the relish on the other. Sprinkle the sandwich with the onion powder, cayenne pepper, salt and pepper. Close it up carefully and enjoy!

This is a simple sandwich that can be dressed up just about anyway you like it. Some other alternatives include sweet onion, bell peppers, and even sliced cucumbers. Add a sprinkle of fake baken bits and serve with veggie chips for an easy, fresh lunch idea.
