Ingredients
Ingredients (use vegan versions):
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 can (15 oz.) whole kernel corn, drained
- 2 cans (15 oz.) chopped tomatoes
- 2 cans pinto beans (I use 2 1/2 cups cooked pinto beans)
- 1 cup water
- 1 package chili seasoning mix
- (I use my own mixture of spices & seasonings to avoid additives)
Put everything in a crockpot and mix well. Simmer all day, about 8 hours. I serve this with whole wheat vegan bread. This is well liked by my children, thereby making it a "kid friendly" recipe.
