Ingredients
Ingredients (use vegan versions):
- 1/2 block tofu (silken-firm)
- handful of steamed kale
- 1/2 a red pepper
- 1/2 a yellow pepper
- 1/2 large white onion
- 2 cups of vegetable broth
- 1 sliced carrot
- any other veggies if prefered
I like to saute my tofu in some olive oil and soy sauce before adding to soup, but spice your tofu however you wish. This recipe is open to interpretation! :)
Heat veggie broth.
Shop veggies, add to broth.
Add steamed kale (high in calcium).
Keep on low heat until simmers.
**I like to put some alphabet letter macaroni in my soup accationally for fun.
Serves: 3-4
