Ingredients
Ingredients (use vegan versions):
- 1 medium eggplant
- 3 tablespoon toasted sesame seeds
- 1/2 teaspoon toasted cumin seeds
- 1/2 fresh lemon
- 1 1/4 rice milk
- 1 teaspoon salt
- black pepper
- 1/2 teaspoon nutritional yeast
- pinch of paprika
Cut eggplant into 1ââ¬Â thick slices. Brown both sides of slices in med high heat in a non-stick pan (no oil/water). While browning, combine all ingredients (except yeast and 1 tablespoon sesame seeds as topping) in blender and mix until smooth. Pour mixture into pan with slices. Cover and cook on low until eggplant is soft (20 mins - add water as necessary) Once done serve and sprinkle with nutritional yeast and some toasted sesame seeds (optional). Enjoy!!!
