Ingredients
Ingredients (use vegan versions):
- 6 Falafels (a good recipe is in The Art of the Sandwich by Jay Harlow)
- about 2 cups of chopped lettuce
- about 1 cup of chopped fresh tomato
- Tahini dressing:
- 1 clove of fresh garlic minced
- 3 teaspoons of lemon juice
- 1/3 cup vegan soymilk
- 1/4 teaspoon salt
- 2 1/2 tablespoons of tahini
- 2 whole wheat vegan pita breads
Break falafel and pita into bite sized pieces, toss with tomato and lettuce, dress with tahini dressing, and EAT.
