Ingredients (use vegan versions):
- 1 can black beans
- 1 can white kernel corn
- 1 small jar medium salsa
- 1 purple onion, chopped
- 1 red bell pepper, diced
- 1 Tablespoon cumin powder
- Juice of 1 lime
- 1 teaspoon chopped garlic
Serves 10.
Drain black beans and corn. Mix together. Add remaining ingredients and mix well with bean corn mixture. Serve with baked tortilla chips for a fat-free delight!! Guaranteed success!!
