Ingredients
Ingredients (use vegan versions):
- 1 8-9 oz. can red kidney beans, mashed
- 1/2 cup vegan bread crumbs
- 1 tablespoon rice emilk
- 1 tablespoon olive oil
- 4 small white mushrooms, diced
Mix together kidney beans, mushrooms, rice milk and vegan bread crumbs. Heat oil over medium heat in a shallow pan. Split the bean mixture in half and form it into 2 patties(you can freeze the other one for later if you like). Fry it in the oil until brown on both sides. Serve however you prefer (in a pita is pretty good, or on dark rye).
