Ingredients (use vegan versions):
  • 1 cup olives (in your favorite color)
  • 2-4 tablespoon extra-virgin olive oil
  • chopped garlic (optional), to taste
  • 1 small ripe tomato
  • 1 ripe avocado (preferably the bumpy, black Haas kind), peeled & pitted
  • 2 slices whole wheat vegan bread or whole wheat roll
Directions:

Put olives, garlic & olive oil into blender. Blend into a paste. Adjust garlic and oil to your liking.

Toast vegan bread if desired. Spread paste onto bread. Slice avocado and place on vegan bread. Slice ripe tomato and place between avocado and spread.

Close sandwich and stuff into face.
