Ingredients
Ingredients (use vegan versions):
- Dressing:
- 3 tablespoon olive oil
- 3 tablespoon balsamic vinegar
- 2 tablespoon chopped fresh bazil
- 1 clove of garlic
- Salad:
- 1 - 15 oz can red kidney beans (drained and rinsed )
- 1 cup sliced celery
- 1/4 cup chopped onion
- 1 medium cucumber, halved lengthwise, seeded, sliced
Combine all dressing ingredients, set aside. Combine all salad Ingredients (use vegan versions): mix well, pour dressing over. Can be made up to 8 hours ahead. Tastes better if given time to "marinate"(1/2 hour would be good).
