- 1/2 to 3/4 bunch asparagus
- 1 tablespoon olive oil
- juice of 1/2 lemon
- salt to taste
- 3/4 cup cooked rice
- handful of slivered almonds
This dish is terrific as a side dish or as a quick, light, summertime meal.

Directions
nHeat the olive oil in a frying pan nover medium-high heat. Add asparagus nand stir once,then cover and allow to nsteam/saute. Peek,stir,and salt-to-ntaste every minute or so until spears nare bright green. Remove from heat & nadd lemon juice - I rather enjoy nadding a little lemon pulp,as well.n
nIn serving bowl,combine asparagus + njuices,rice,and almonds. Celebrate!n
