Ingredients
- 2 med/large sweet potatoes
- 3 tablespoon non-hydrogenated vegan margarine
- 1 1/2 tablespoon vegan brown sugar
- cinnamon (a few good dashes)
- nutmeg (a small dash)
- 1/2 cup of orange juice or 1/2 cup crushed pineapple
- salt to taste
Boil or bake the sweet potatoes until soft. Remove the skins. mash all the remaining ingredients into the potatoes. serve and enjoy!!
(If you''re wanted a slightly more sweet or festive dish, put the mashed yams in a casserole dish, cover with a layer of vegan marshmallows and bake at 350 until the marshmallows on top turn a light gold color.)
This recipe is a wonderful side to any meal, however, when I cook it I usually have a salad or greens, some fried tofu, and some fresh vegan bread with it, and its a lovely meal!
