This is one of those cooking ideas where every version is different. I cook these when I''m really hungry and don''t feel like being healthy! Great for the munchies.
Chop up some potatoes into 3/4" cubes, microwave or steam if you like until they begin to soften. Heat a fry-pan (I prefer non-stick) nice and hot, and add as much oil as you feel like (none is ok in a non-stick frypan but in this case pre-cooking might not be the best idea). Add garlic powder and any other spices that will not mind being fried, eg onion powder, ground cumin seeds, ground cloves, chilli powder, pepper. Add some herbs (I like a lot of rosemary. Oregano and thyme would also be good), chopped nice and fine. Throw in the potatoes and fry until cooked. Toss frequently. You choose how hot you want the pan, and whether you want to pre-soften them in the micro. Higher temperatures lead to a more charred outside of the cubes. Pre-softening them shortens the overall cooking time (good when you are really starving) and can lead to some interesting textures and little bits of mashed up potato that have fallen off, but they don''t look as nice. Taste and add further spices (eg pepper, paprika, ...) and salt as you wish. Eat.
