Ingredients
- peanut butter
- vegan powdered sugar
- vegan margarine
- vegan chocolate chips (or carob chips)
- vegetable shortening
This one is very easy to make. Take approximately 2 cups of peanut butter, 1.5 cups of vegan powdered sugar, and 1 teaspoon of soft vegan margarine and mix together. Add vegan powdered sugar if mixture is too soft and add peanut butter if mixture is too dry. Roll into balls according to how small or large you would like them (the chocolate adds a lot to the size). Let cool in refrigerator for about 20 minutes. Melt chocolate with a teaspoon of vegetable shortening in a double boiler, constantly stirring. Quickly dip balls into chocolate and place on wax paper to cool. They are soft and will melt in the chocolate if dipped too long. Refrigerate about five or ten minutes until hard. Ready to serve.
