Ingredients
Ingredients (use vegan versions):
- 1 28 oz. can diced tomatoes
- 2 cucumbers, peeled and cubed
- 2 tablespoon vegan Worcestershire sauce (or to taste)
- pepper (to taste)
- dash tabasco (optional)
Place all ingredients in med-large tupperware and refrigerate for at least an hour.
There! I have to admit I wouldn''t serve this at a fancy dinner party, but it''s a great light lunch or dinner for a busy person like me! Make sure you get a good brand of canned tomatoes.
