Ingredients
Ingredients (use vegan versions):
- baby carrots chopped into little circles
- celery chopped
- parsley
- no-chicken broth or vegetable broth
- egg free noodles or if you are gluten free, rice noodles, or I guess you could use carbo lite noodles
- a little pepper
- a few mushrooms
Boil the noodles in the broth with all of the vegetables. Add a little parsely and a bit of pepper. Wait until the noodles are soft and the carrots are soft too, then, stir and serve.
