Ingredients
- Soyrizzo (or other vegan soy sausage substitute)
- can of organic potatoes, drained
- can of organic green beans, drained
Plop the potatoes and green beans into a pot on the stove and crumble as much of the soy sausage into the mix as you like. Heat thoroughly and serve. :)
(By the way, this stuff makes excellent left-overs. I''m a left-over girl...)
When my Grandmother makes this she makes HUGE batches and uses large chunks of real sausage. It was one of my favourite meals when I was a kid, so naturally I''ve tried to re-create it. The Soyrizzo sort of crumbles apart, but it has really good flavour and as long as you''ve drained most of the liquid out of the potatoes and green beans, it mostly stays chunky rather than dissolving. I promise it''s delicious! My husband is an avid meat- eater and he asks for this all the time. If anyone finds another great Vegan sausage substitute, please let me know! I''d like to experiment. :)
