Ingredients (use vegan versions):
  • 5 oz spinach leaves (I use half of a bag of pre-washed stuff)
  • 2 cans (10 oz each) of mandarin oranges
  • 2-3 tablespoons of sesame oil
  • 2 teaspoons soy sauce
  • 1/2 cup sunflower seeds or crushed almonds
Directions:

Mix everything together in a big bowl. Pretty simple, huh? Just to be warned, this doesn''t keep very well, so make it right before you serve it.
