Ingredients
Ingredients (use vegan versions):
- 1 eggplant
- curry
- something fat or oily (something close to butter)
I call this my good night eggplant because when i come home late but hungry this needs no energy to prepare and is light enough for a good sleep. Wash the plant and slice it into two halves. Carve a bit on the surface so that the oily something can penetrate. Put the butter-substitute flakes on it and cover with a thin layer of curry. Now put it into the oven at high heat for about 15 minutes until the eggplant is soft. Enjoy!
