Ingredients
Ingredients (use vegan versions):
- 2 large baked potatoes
- 1 large zucchini
- 1 med tomatoe
- 1/2 cup sliced mushrooms
- 1 tablespoon oregano
- tofu sour cream....to taste
Saute all veggies with oregano and a some olive oil. Spoon onto baked potatoes. Top with tofu sour cream.
