Ingredients
Ingredients (use vegan versions):
- 2-3 pounds of baking sweet potato yam
- 2 teaspoon of ginger-grounded
- 1/2 teaspoon of Orange Crust or grated orange peel
- 1/2 cup of finely chopped pecans
- 2 teaspoon of vegan soy butter melted/softened
- 1/2 eggless vegan mayonnaise/salad dressing
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/2 succanut/turbinado vegan sugar/apple butter
The yams are precooked by baking in aluminum foil. Peel and mash. Mix yams with other ingredients- sweetener, ginger and orange in to a 1-1/2 or 2 quart casserole.
Then, mix other ingredients with mixture. Bake for 25 minutes at 350 degrees and sprinkle cinnamon and nutmeg
