Ingredients
Ingredients (use vegan versions):
- 3/4 cup soy or canola non-hydrogenated vegan margarine
- 3/4 cup sucanat
- 1/2 cup non-refined vegan sugar OR 1 + 1/4 cup sucanat total
- 1 Ener-G Egg Replacer
- 2 tablespoon water
- 2 teaspoon vanilla
- 3/4 cup flour
- 3/4 teaspoon baking soda
- 1 teaspoon cinnamon (optional)
- 3 cups oats
- 1 + 1/2 cup raisins or non-dairy choc. chips (optional)
Preheat oven to 350 degrees. Cream together the margarine, vegan sugar, egg replacer, water, and vanilla. Beat until well mixed, kind of fluffy.
In a separate bowl, mix flour, baking soda, and cinnamon. Add to first mixture, and beat on low until blended. Add oats and raisins/chips. Drop by tablespoonfuls on greased cookie sheets. Leave in drops for chewy cookies, but press flat for crispy cookies.
Bake for 10-12 minutes, or edges are golden.
