Ingredients
- 1 apple
- unsalted "saltine" crackers (I guess you could use salted too)
- vegan brown sugar and/or cinnamon to taste (optional)
- soy ice cream (vanilla or vanilla base, such as vegan chocolate chip is best)
- toppings for soy ice cream (optional)
- a few tablespoons of soymilk (recommended) or water
Crumple some saltines and put a thin layer on the bottom of a bowl (like a soup bowl, not a big serving one, though you could make a bigger recipe in a large bowl). Add a few tablespoon (a big soup spoon for you metric people) soy milk to the bowl, about enough to almost cover the vegan crackers. Microwave for 30 seconds to soften the vegan crackers and blend in the soymilk. While it''s microwaving, cut the apple 1 time widthwise and 3 times lengthwise and cut the core pieces out (you can peel it if youwant, but the skins add flavor and color. don''t forget to take off the sticker.)
Put the apple in the bowl over the bottom "crust." If you are using brown sugar and cinnamon sprinkle it on the apples. Add another layer of crumpled saltines. Microwave until the apples are somewhat softened, starting with 1 minute and adding 30 second increments. When apples are soft, top with a scoop of soy ice cream and add the toppings. It will be hot so you may want to chill it in the fridge for a minute, or leave it out for a bit before you eat it. If you use vegan chocolate soy ice cream or topping it will be really rich so you should eat with a glass of soymilk. You probably shouldn''t use vegan chocolate topping and soy ice cream at the same time because it''s too rich.
I don''t know the nutrition content but you probably shouldn''t eat it 3 meals a day.
