Ingredients
Ingredients (use vegan versions):
- 250gm brown lentils
- chopped carrot
- half chopped onion
- 5 mushrooms thin sliced
- broccoli cut small
- green round beans chopped
- 2 vegetable stock cubes (any type)
- 1 small clove crushed garlic
- black ground pepper
- pinch of thyme
- extra virgin olive oil
In a large Pot, Add Olive oil and heat. Add Chopped onion & mushrooms. Stir for a minute. Add half cup of Boiling water. Add Carrot, Brocoli, Green Beans & Stock Cubes. Add Crushed Garlic, pepper & Thyme. Stir for a minute Add Lentils. Add 4 Cups of Boiling Water. Simmer uncovered until Lentils go soft (stir occasionally).
Note: You may need to add or reduce the amount of water depending on the amount of vegetables you add.
