Ingredients
Ingredients (use vegan versions):
- 1 cup textured soy protein
- 1 cup boiling water
- 1 can (28 ounces) diced tomatoes
- 1 can (3 ounces) tomato paste
- 3 tablespoons chili powder
- 1 large onion, diced
- 1 can (14.5 ounces) corn, undrained
- 1 can (14.5 ounces) Old El Paso fat free spicy refried beans
- 2 teaspoons cumin
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano
- 1 (15 ounce) can kidney beans, undrained
Place the textured soy protein and the boiling water in a large pot. Let sit for 5 minutes. Add remaining ingredients EXCEPT the kidney beans. Cook 30 minutes. Add the beans and cook an additional 30 minutes.
