Ingredients
Ingredients (use vegan versions):
- 1 cup dry lentils, washed and sorted
- 3 leeks, washed carefully and chopped
- 1 carrot, chopped finely
- 1 tablespoon vegetable broth mix
- 6 cups water (or 6 cups vegetable broth)
- 3 bay leaves
Place lentils and water or stock into a large heavy pan. Bring to a boil, then reduce heat to low, cover and cook for 30 minutes. Then add the rest of the ingredients, bring to a boil again, reduce heat and simmer for 15 minutes. Serve!
Serves: 4.
