Ingredients
- 30 oz. cooked black beans
- 1 large onion
- 2 cloves of garlic
- few sprigs of fresh parsley
- 1-2 cups of salsa (1 foe less spicy)
- oil for sautee
- to taste: bazil, salt, pepper, paprika (generously),
Directions
Serves: 8-10.
Preparation time: 15-20 min.
Saute onion and garlic. Put in beans (large pot). Heat the beans and
put the salsa in. add spices, warm until hot. Add more water in the
process if necessary. You may want to slightly drain the beans but
you don't have to. If you drain, you'll need to add water. If you do
add water, be sure to replenish the spices to your liking.
You can add greens or broccoli over the top when serving. Also,
green onion slices are good. If you make
this thick enough you could even plop it over rice!
