Ingredients
Ingredients (use vegan versions):
- 10 oz. brussel sprouts, cut in two
- 1 small butternut squash, cubed
- 4 cloves minced garlic
- 1 tablespoon fennel seeds
- 1/4 cup green pumpkin seeds
- 1/3 cup peanut oil
- salt and pepper
- 1 teaspoon oregano
- your favourite pasta
Preheat oven to 450. Mix together all of the ingredients, place on a baking sheet and roast for 15-20 min. Add the pumpkin seeds during the last two minutes. Add everything to your favourite pasta shape and enjoy!
