Ingredients (use vegan versions):
  • 2 cups seeded and coarsely chopped watermelon
  • 2 tablespoon onion, chopped
  • 2 tablespoon water chestnuts, chopped
  • 2-4 tablespoon Anaheim chilies, chopped
  • 2 tablespoon baslsamic vinegar
  • 1/4 teaspoon garlic salt
Directions:

Combine all ingredients and mix well. Refrigerate for at least an hour. Makes 2 cups.
