Ingredients
Ingredients (use vegan versions):
- 1/4 cup chopped firm tofu
- 16 oz can vegetarian baked beans
- 2 tablespoon chopped onion
- black pepper (to taste)
Place Tofu, Beans, and Onion in a microwave-safe bowl. Heat on High for 4 minutes -covered- stirring halfway through cooking time. Remove from microwave (careful! It''s hot). Add as much pepper as you''d like (I love pepper, so I POUR it in there) and enjoy!
I came up with this during my lunch break today. I''m going off to college next fall and this will definitely make a great, filling lunch when I don''t have the money to eat anywhere else!
