Ingredients
- 4-6 oz extra firm tofu
- 1 teaspoon olive oil
- 1-3 teaspoon your favorite spices
This is a great bring-to-work lunch.
I like to press my tofu for 1/2 an hour before using, but as long as it''s very firm, it will be fine.
Slice tofu thinly. Throw into a microwaveable container, then add oil and spices. Mix gently. My favorite combo is curry powder and garlic powder. You could use sesame oil and soy sauce for an asian-inspired sandwich. Whatever. Mix it up and put it in the fridge until lunch time. Microwave 2 minutes, stir, then microwave another 3 minutes. I like my tofu really firm and meaty-like, so I really nuke it, but you can adjust to your taste.
Eat on a pita with tomato slices.
