Ingredients
Ingredients (use vegan versions):
- 1 large green pepper (or 2 medium)
- 1 large onion
- 1 large zucchini
- 1 can of stewed tomatoes
- salt and pepper (to your own taste)
- a dash of paprika
- 2-3 tablespoon non-hydrogenated vegan margarine
Melt margarine in a large pot. Slice all vegetables and put in pot, get the margarine on ''em good then add stewed tomatoes and salt, pepper and paprika. Allow to simmer for 15-20 minutes, depending on how crunchy you like the veggies!
