Ingredients
Ingredients (use vegan versions):
- one lotus root
- one chayote
- one small onion
- one garlic clove
- 2 teaspoons curry paste
- 1 to 1 1/2 cups mushrooms
Mince garlic and onion and fry in pan until golden. Add curry paste and mix well. Peel and cube lotus root and add. After 2 minutes add peeled and cubed chayote. Let simmer for about 10 min, then add diced mushrooms. Let simMer for another 2 minutes. Serve over rice, couscous, or in a pita as a sandwich.
* I used mild curry paste, but according to taste hotter one can be substituted.
