Ingredients
Ingredients (use vegan versions):
- 5 tablespoon vegan rice wine vinegar
- 5 tablespoon vegetable oil
- 5 tablespoon peanut butter
- 3 tablespoon soy sauce
- 3 tablespoon brown vegan sugar
- 2 tablespoon minced ginger root
- 1 1/2 tablespoon minced garlic
- 5 cup thinly sliced green cabbage
- 2 cup thinly sliced red cabbage
- 2 cup Napa cabbage shredded
- 2 red or yellow peppers, thinly sliced
- 2 carrots, julienned
- 4 green onions, chopped
- 1/2 cup chopped cilantro (fresh)
In a medium bowl, whisk together the rice vinegar, oil, peanut butter, soy sauce, brown sugar, ginger, and garlic.
In a large bowl, mix the green cabbage, red cabbage, Napa cabbage, red bell peppers, carrots, green onions, and cilantro. Toss with the peanut butter mixture just before serving.
