Ingredients
Ingredients (use vegan versions):
- 1/4 cooking sherry
- 1 pkg. sliced mushrooms
- 4 stalks celery, chopped
- 1 bunch green onions, chopped
- 4 med. zuccini, sliced
- 4 med. yellow squash, sliced
- 2 lg. cans tomato paste
- Spices:
- 2 tablespoon garlic or
- 2 teaspoon pepper
- 4 bay leaves
- 3 tablespoon Italian seasoning
- 2 tablespoon parsley flakes
- 2 tablespoon Old Bay Seasoning
- 4 cup water
- Angel hair pasta
Place all veggies in large Dutch oven with lid. Add sherry, tomato paste, spices, Old Bay Seasoning, water. Simmer approx. 1 1/2 hours or until thickened. Serve over pasta. (Add more spices to taste; add more or less water for desired thickness) ENJOY!!
