Ingredients (use vegan versions):
  • 1 1/2 cups flour
  • 3/4 cup vegan sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vegan maple syrup
  • 2 "egg whites" (I use 2 Ener-G vegan egg replacer eggs)
  • 3 ripe bananas, mashed well
  • 1/4 cup unsweetened applesauce
Directions:

Preheat oven to 350F. Mix dry ingredients, then add maple syrup, "eggs", applesauce, and bananas. Pour into greased baking pan and bake 50-55 minutes, or until a toothpick comes out clean. Turn out onto rack, let cool 10 minutes.

Note: this vegan bread is fairly dense and moist. Be sure to test it with a toothpick before deciding it''s done, or the bottom might be overly wet and chewy.

Serves: about 12
