Ingredients (use vegan versions):
  • 1 large baker potato
  • 1 can vegan fat free refried beans (black or pinto- or you can make your own!)
  • salsa
  • vegan "bacon" bits
  • green onions to taste
  • jalapenos to taste
  • salt, pepper, olive oil
  • dressing: vegan ranch dressing packet and vegan yogurt
Directions:

First bake the potato. Microwave works fine, it''s easier. Just poke some holes in it and cook on high until done (usually 10 minutes).

Cut potato in half once baked and let cool for a few minutes. Once a bit cool, scoop out the innards, but not all of it, leave a bit. You can use the insides for mashed potatoes or some other meal if desired. Then brush a bit of olive oil on each side of the potato and cut into strips. Season inside with s&p. Then put a generous amount of refried beans (cold or hot) onto each slice, then some bacon bits and jalapenos. Put on a baking sheet and bake at 400 for approx 10 minutes until bottoms are crispy. (some ovens are complicated, so this may very)

Then when it''s cooked up on a plate and top with salsa and chopped green onions. It''s great with vegan ranch dressing (just mix the dry packet with the tofu yogurt and viola!)
