Ingredients
Ingredients (use vegan versions):
- 2 cup lentils, rinsed
- 1 can vegetable broth + 1 can water
- 1 can stewed tomatoes or 2-3 fresh tomatoes, chopped
- 4-5 small zucchini, cubed
- 1/4 teaspoon dried thyme
- 2-4 cloves garlic, minced
- 1 1/2 teaspoon salt
- dash crushed red pepper
Combine all ingredients in large stock pot. Bring to a boil. Reduce heat and simmer until tender, about 1 to 1.5 hours.
