Ingredients
Ingredients (use vegan versions):
- 3 tablespoons of dark sesame oil
- 1 onion
- 1 medium size Eggplant
- 3/4 cup of unfiltered apple juice
- 1/2 cup of cashew nuts
- 1/4 cup of Tamari or Soy Sauce
Slice onion anyway you want.
Saute in oil until golden.
Slice eggplant into 2" by 1/2" slices, add to onions.
Saute for about 10 minutes.
Add applejuice and cashews.
Simmer until apple juice is reduced to about half the amount
-- about 10 minutes.
Remove from stove and add Tamari to taste.
Serve over rice.
