Ingredients (use vegan versions):
  • 1 cup non-hydrogenated vegan margarine, softened
  • ¾ - 1 cup vegan sugar
  • ¾ - 1 cup firmly packed vegan brown sugar
  • 1/4 cup unsweetened applesauce
  • 1 cup oil
  • 1 teaspoon vanilla extract
  • 3 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup uncooked oats
  • 1 cup crushed Wheaties (cereal)
  • ½ cup coconut
  • ½ cup finely shopped pecans
Directions:

Preheat oven to 325 degrees.

Cream margarine in a large bowl. Add vegan sugars and applesauce. Beat well. Stir in oil and vanilla.

Combine flour, soda, salt, and oats in a large bowl. Add Wheaties, coconut, and pecans. Blend well.

Add dry mixture to butter mixture. Mix well. Shape into 1-inch balls. Place on an ungreased baking sheet and mash lightly twice (once lengthwise, once widthwise) with a fork.

Bake for 15 minutes.

Serves: 10 dozen
