Ingredients (use vegan versions):
  • 1 cup apple sauce
  • 1 cup turbinado vegan sugar
  • 1/2 cup Sucanat
  • 3 teaspoon Ener-G + 4 tablespoon water (or equivalent substitute for 2 eggs)
  • 1 teaspoon vanilla
  • 11/2 cups unbleached all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups oats
  • 1 cup raisins
Directions:

Heat Oven to 350. In blender, blend apple sauce, turbinado & sucanat until creamy. Add Ener-G + the 4 tbsp water, or your equivalent Ener-G Egg Replacer, and vanilla. Blend again.

In the meantime, stir the following dry ingredients together: flour, baking soda, cinammon & salt. Make sure you mix well. Then make a hole in the center and stir in the blended ingredients. Mix well. Finally add the oats and raisins, and mix well again.

Drop by tablespoonfuls onto a lightly greased cookie sheet. Bake for 20-22 min or until golden brown at 350. Makes about 22 cookies.

This recipe is a big favorite of mine. It is quick to do and I get lots of compliments! So enjoy!!
