Ingredients

Ingredients (use vegan versions):
  • 1 pound soft Tofu
  • 1/2 cup Sweetner (maple syrup is best)
  • 1/2 cup orange juice concentrate
  • 2 teaspoon orange zest (grated orange peel, organic of course)
  • 1/4 teaspoon salt
  • preferred substitute for two egg whites
  • 1 orange cut into sections or 1/2 cup mandarin oranges.
  • Use another 1/2 cup for decoration if so desired
  • baked pie shell (check ingredients)
Directions:

* Blend tofu, sweetner, concentrate, zest and salt until smooth (I would say the consistency a little thicker than pancake mix)

* Place in bowl and fold in egg white substitute

* Carefully fold in orange sections

* Pour into baked pie shell, and bake for 1 hour at 325

* Chill.

* Serve with orange slices on top (optional)

Serves: 1 Pie
