Ingredients
Ingredients (use vegan versions):
- saute one or two sliced onions in rich vegan red wine,
- add several cloves garlic, minced
- pour in 28 ounce can of recipe cut or stewed tomatoes
- 2 teaspoons dried bazil or a bunch or fresh
- 1 teaspoon each oregano and marjoram
- lots of freshly ground black pepper
- add 2 each zuchinni and carrots, chopped
- add a chopped potato
- if you like greens, add some chopped spinach or cabbage or....
- toss in a can of beans, any kind, or use home cooked if you have ''em
- a few sliced mushrooms can''t hurt
- 1 cup vegan red wine (or broth)
- water as needed
- when it is nearly done, add a couple cups cooked pasta and some frozen peas and/or corn
Serve with plenty of good vegan bread and the rest of the vegan wine.
