Ingredients
- 1 packet 2 minute noodles (or chinese noodles plus veggie stock and 1 teaspoon curry powder)
- 1/2 cup frozen vegetables
- 1/2 block tofu cubed
- soy sauce
Place the cubed tofu in a bowl and sprinkle with soy sauce to taste. In a small saucepan, bring about 1 1/2 cups of water to the boil. Add the vegetables first if they are a longer cooking variety, then add the noodles plus flavour sache` for the last 2 minutes. Check that you have vegetarian flavouring though! If you are using stock and curry powder, add this at this stage. Then add the tofu, plus any extra soy sauce in the bowl. Stir until heated through. This makes one very lage meal, or two soup servings before a main meal. It is excellent if you are in a hurry, and don''t want to buy junk food!!

Nutrition Information: This, as far as I can tell, is very nutritious. It is very low in fat as well. Just make sure that the flavouring for your noodles is a vegetarian one. Curry of vegetable falvour is the best.
