Mixed Bean Chili

Ingredients (use vegan versions):
  • 1 onion sliced
  • 1 green pepper diced
  • 400g can kidney beans drained and rinsed
  • 400g can chopped tomatoes
  • 400g can mixed beans drained and rinsed
  • 125g brown rice
  • salt & pepper
  • 1 teaspoon garlic powder
  • 2 teaspoon chili powder
  • dried mixed herbs
  • 1 cup of water
Directions:

Heat a little oil in a large saucepan , add onions , salt and pepper and fry till soft , add rest of ingredients with a sprinkle of mixed herbs heat until nearly boiling then turn down low to simmer.

Place lid on saucepan and cook for about 30 minutes , add more water if required , cook rice as per instructions on packet serve chili on bed of rice , also good on baked potato.

Serves: 4
