Ingredients (use vegan versions):
  • 1 cup dry lentils, washed and sorted
  • 3 leeks, washed carefully and chopped
  • 1 carrot, chopped finely
  • 1 tablespoon vegetable broth mix
  • 6 cups water (or 6 cups vegetable broth)
  • 3 bay leaves
Directions:

Place lentils and water or stock into a large heavy pan. Bring to a boil, then reduce heat to low, cover and cook for 30 minutes. Then add the rest of the ingredients, bring to a boil again, reduce heat and simmer for 15 minutes. Serve!

Serves: 4.

Preparation time: 50 minutes.
