Ingredients
Ingredients (use vegan versions):
- 12 oz whole wheat rotini
- 1 1/2 heads broccoli, chopped
- 3/4 pint grape tomatoes
- 15 oz can black beans
- 3 oz vegan soy blue, asiago, or feta "cheese" crumbles
- 1/2 cup balsamic vinaigrette
1. Cook, drain, and cool pasta.
2. Steam broccoli until slightly soft, about 7-10 minutes, cool.
3. Combine all ingredients in a large serving bowl, ad chill at least one hour.
